I am familiar with the black Panasonic PP caps, they are not particularly good sounding.
I suggest that you try Auricaps, Hovland or RelCap PP & tin or the king of the hill, Relcap TFT exotica for coupling caps.
As for Bypass, my suggestion is avoid them like the plague.
Some amps invert phase, it isperceived as sounding slow and undynamic. Try reversing the + and - loudspeaker cable at the speaker end.
If the amp were mine, I would locate the trafo centrally and place the right channel caps closer to the right channel output devices.
Other than that, it seems to be a fine piece of work.
