You have intellectual curiosity: that's a GOOD thing! BUT you are getting mired down in noise level trivia and subjective dogma. That's not where you start.
Start with the basics! Brush up on your high school physics relating to AC and DC circuit theory; buy a good book on tube electronics, Andy suggested Morgan Jones. His book has a wealth of information regarding the technical matters that REALLY DO MATTER. Not only will you be well educated in the field you wish to learn about, BUT you will be immune to much of the noise level nonsense that is the bulk of the information disseminated on the internet.
Regarding the ST70: The ST70 circuit topology is a pentode voltage amp driving a triode acting as a phase inverter. The 7199 is both the pentode and triode in the same bottle. The Triode Electronics board retains the circuit topology but breaks out the two fuctions e.g., pentode and triode into two separate tubes. This makes a tremendous amount of sense because you can now choose your own pentode and triode and are not stuck with an obsolete tube type.
It makes much more sense to learn about practical details about real technical issues rather than worry about getters and the color of plates. You need to understand what a plate is and the function of the getter not the color or shape.
