Actually a minor point to add -Transformers will vary the output voltage between no load and full load. Although better transformers are pretty well regulated, others are pretty poor. For example, there are tons of 2.5v/10a transformers on the surplus market intended for pairs of large rectifiers (866A etc). Try and use them on a 45 and you'll be well over 3v output - and shorten tube life.
Hammond is good about spec'ing their stuff with this in mind. If you look at the specs for the 166Q2 which is a 2.5v/6a model, it's rated at 3.03v NL, and 2.5v FL.
If you use an "overrated" transformer, measure the final filament in the circuit, and consider a small dropping resistor to bring the output back into line.
