44/16 is not fine for vinyl. There is more resolution on vinyl than CD format permits. Also, if you rip at lower resolution it will be more difficult to edit out any ticks and pops than if done at higher resolution.
The only benefit of recording LPs at lower resolution is saving disk space. The cost of disk space to properly digitize an LP (e.g. 192/24) is less than $0.25. Contrast that with the value of your time if you decide to have to redo vinyl "rips" because you want to increase resolution.
