If you use a passive attenuator you will get high frequency roll-off due to the input capacitance of the load, which includes the cabling from the attenuator to the ADC. To minimize this effect, you should use the shortest possible cable between the attenuator and the ADC. Also, unless the cabling is very short (inches) it may be worthwhile to splurge on high quality low capacitance cable.
Regardless of how you do it, you will need some kind of control on the analog gain from the cartridge to the ADC. This comes about because LPs are recorded at a wide variety of levels as well as the fact that ADCs have a "sweet spot" in terms of the sound quality when running at different levels. To follow up on this "sweat spot" discussion, I suggest running some tests at different settings with the analog control and then normalizing the resulting digital recordings so that they are at the same level when played back. Then you can compare how the ADC sounds when being run at different signal levels (for particular types of music). In general, a good starting point would be for peak level on a side to be somewhere above -12 dBfs (as seen in the sound file) and somewhere below -4 to -6 dBfs. I would try doing this for several different musical genres and get familiar with how settings affect the sound before doing any "production" work.
