Until I moved to a place with Ethernet in the rooms, I did this for a number of years. No problems with noise although I appreciate the possibility with some gear. Also possibilities of ground loop noise depending on the network device.
I used the inexpensive Trendnet 500Mbps devices. Trouble free for years and certainly more reliable in my 3-floor house compared to WiFi. Just be aware of limitations to throughput speed (I could not achieve > 50Mbps actual thruput between floors). Good enough also for HD 1080P video for those running HTPCs.
