RE: here's a link to a Monty video

Monty has an argumentative tone. He makes misleading statements. This is apparent from the very beginning of the video. For example, the use of analog scopes to show waveforms is a strawman argument to debunk the "stair step" argument which is not the real issue with low res digital. And it is a bogus strawman argument, because equipment used will not show remaining distortions that can be obviously audible.

I recall that there were many other problems with the video when I watched it some time ago, but I couldn't stand to watch any more today than just the very beginning, just enough to identify the video. The problem is that the video is attempting to explain a complex engineering system in simplistic terms that technicians or non-technical people might possibly follow. Unfortunately, the devil is in the details at a deeper level.

If you want to know the truth of low-res digital vs hi-res audio there are two ways that I can think of to deal with this issue according to one's type. Either one will do.

S - Get good recordings, decent equipment and do comparison tests.

O - Take masters level engineering courses on "signals and systems", "digital signal processing" or equivalent, something that requires several years of college level math as a prerequisite.
