These mastering engineers are dealing with many of the same issues as those who record the original tracks. They do not have the limited perspective of the audio consumer. I suspect if you dig into it you will find that the vast majority of these people did not start out as mastering engineers.
For the most realistic and natural recordings there are no extra steps beyond the original recording, other than editing the musical performance. If there is any further post processing it is only to fix mistakes that were not found in time, and the end result is never as good as it might have been had the musicians been available for a retake.
