"Umm.... if going from unshielded CAT5 to highly shielded CAT7 sounds different/better as you say, is the data getting there just fine in both cases but there's more RF in the air/powerlines to pollute the sound through some other mechanism than bit errors? No idea, just asking."

That would seem to be the case.

This hypothesis can be tested if one runs the downstream converters and amplifiers from another digital source and compares how the music sounds with the network powered up and connected and transmitting audio data to a dummy DAC vs. when this disconnected network is powered down.
