The packet issue is very real. Packets have to be large for the network (Ethernet or USB) to work efficiently, but this implies large buffers and a low frequency buffer refresh rate, hence if the depacketizing creates noise it will be at a particularly bad frequency. Going to a purely serial stream such as I2S allows for an arbitrarily small buffer size (as little as a single sample, which could be at DSD rates).

What John has now measured (and what I had theorized over a year ago) is how the isolators won't completely isolate. My solution to that was to use multiple stages of isolation, if necessary, each with electrical isolation, reclocking, and separate power and packaging.

It is important to keep in mind the difference between isolation and sound quality, as they are not the same thing. Isolation is only a means to an end, and perfect isolation will be useless if the resulting sound isn't good.
