I can't say I ever heard a difference between x64 and x86 Windows 7. These days, I think anyone installing a new build should just go for the x64 since it's essentially mainstream now unless there are some legacy drivers that may not work.
I just installed Win 8 on my main hobby machine this weekend. Although it's been trouble-free thus far (all Win 7 drivers even the old ones for the E-MU 0404USB work), I suspect there will be a bit of hesitancy before most people jump in. Other than stuff like extra boot/shutdown speed, there's nothing here that's a clearly an improvement in day-to-day use.
The "Start Screen"/Metro interface holds some promise but I suspect there will be much confusion and frustration for the first few months in the general public. So far, it just looks like Microsoft's attempt at monetizing the "App Store" model to generate revenue. They killed off Windows Gadgets however which I used (mainly for my Twitter feed, there are 3rd party ways of getting this back).
Metro seems to be quite fast so no performance issues here. Have installed my usual collection of programs - Foobar, dbPowerAmp, Lightroom, Photoshop, Office, VLC, Firefox, Chrome... No crashes.
