Alas, Twonky I believe is DLNA and iTunes doesn't speak DLNA, just DAAP for remote libraries.
The fact that the Apple system is so tightly knit with iTunes / QuickTime is insane and you're forced to use it for Amarra or BitPerfect to access remote libraries.
As for standalone programs like Fidelia and Decibel, they look great but I don't think they will link with remote iTunes libraries.
I guess I can see why people use Mac's as playback computers (they're cute, small, quiet), but once you want a little flexibility "outside of the box", it really seems very restrictive. Made worse by Apple's closed attitude towards 3rd party support (they don't even publish the specs for DAAP)... Disappointing.
