I tend to like songs that start slowly and build; a few of my favorites would be:

Of Monsters and Men: "Thousand eyes"

Neil Diamond: Opening two songs ("Prologue/Crunchy Granola Suite") from Hot August Night (Live)

Elton John: "Funeral for a Friend"

Supertramp: "Even in the quietest moments"

Led Zeppelin: "Stairway to heaven" (of course)

Patricia Barber: "Too rich for my blood"

Lucia Micarelli: "Aurora/Kashmir"--perhaps my all time favorite piece

Any others come to mind?
